To brew tea in the New Kenya, measure loose leaf tea into the filter, add nearly-boiling water, put the lid in place, and let it brew. When you feel the tea is strong enough, depress the plunger. The leaves are compacted, which stops the brewing process. That way, you can enjoy the serene act of brewing the tea at your table without having the mess of removing the filter.
